Celeriac Velouté

I remember having great meals, important moments, but it's difficult for a lot of folks to think back to the best... sandwich or pizza or steak that they've ever eaten. And yet... this soup; simple, clean, hot, delicious soup is easily the best soup I've ever eaten. Second place isn't even that close (but happened to be later that evening at La Truffiére). 

Restaurant les Vinaigriers is an amazingly perfect distillation of what I think of a when I imagine "French café." They change their menu every day. Sure, maybe you'll see a dish return when specific vegetables are in season, but it's generally new. We were lucky enough to be taken here by a good friend who lives in Paris, so navigating the menu was easier than normal. My French is somewhere between my Spanish and my German, which is to say I can order off a menu, know some simple vocabulary, but generally embarrass myself. Oh, and I can curse. Like a sailor. In numerous languages.
